From the milking process onwards, a certain amount of air and gas naturally enters the milk. Additionally, during storage, transportation, and agitation during discharge and pumping after milking, additional air is introduced into the milk. As a result, the raw milk arriving at our factories contains approximately 7-8% air. While it is not possible to accurately measure the quantity of milk containing air and gas, this condition can lead to aromatic odor and color changes, burning, and sticking during the pasteurization process. Moreover, it has been determined to have adverse effects on cream yield."
